First full week back to work = a fresh week to start a great series with a yummy little ingredient I’ve been seeing a LOT of lately – Quinoa – reminds me a little bit of Cous Cous, but much heartier and packed with protein. I’ve come to learn too that it’s a great base for a lot of fantastic recipes too – Quinoa bites in particular. A while back, I tried these delicious Buffalo Chicken Quinoa Bites from Miki’s Kitchen and they were a perfect, healthy snack for anyone out there that is as Buffalo Chicken crazy as I am. Bites are perfect really – they’re small – they’re cute – you can eat them with your fingers, and it’s generally assumed that you can have one or two extra, cuz’ hey! They’re bite sized!
Why else am I pushing Quinoa? Well, due to it’s protein punch package, it’s considered a power food which I’ll be needing a lot of lately as I begin (or, more like “focus” on) my Half Marathon training schedule. There I said it out loud. Some of my besties from home and I are headed down to Disney in just a few short weeks to do the Princess Half Marathon – and while I can’t WAIT to get down there, catch some rays, eat some Dole Whip, and hopefully get a glimpse of Mickey & Minnie, there’s that whole 13.1 miles to get through first, and I’ve got a ways to go training wise. So come on Quinoa, help a sistah out will ya?
Ok first up, Quinoa Bites for breakfast, the most important meal of the day! And this combination of quinoa, apples and a sweet sprinkling of cinnamon and sugar will start your day off just right 🙂
Apple Cinnamon Quinoa Bites
INGREDIENTS
*yields about 26 bites
1 cup cooked quinoa
1 cup quick oats, uncooked
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3 tablespoons brown sugar
1 tablespoon granulated sugar
1 tablespoon maple syrup
1 cup chopped apples
2 eggs, lightly beaten
1) Preheat oven to 350 degrees.
2) In a large mixing bowl, add your cooked quinoa and quick oats. In a separate smaller mixing bowl, combine your cinnamon, nutmeg and sugars and then add the spice mixture to the quinoa and oats. Then add the maple syrup, apples and eggs and mix until just combined.
3) Spray your mini muffin pan (24 count) with non-stick cooking spray. Make sure to spray the top of the pan as well. The quinoa bites will overflow out of the cup a little bit, so you don’t want the tops to stick.
4) Fill each muffin slot with 1 tablespoon of the mixture and bake for about 15-20 minutes.
Oh yummmm – these were like little hearty mini muffins packed with deliciousness and nutritiousness – the best of both worlds!

can these be made in normal size muffin tins? just if i dont fill it up all the way

Sure thing! I made a dinner style quinoa muffin/bite in regular sized muffin tins and they came out great. I would just recommend ookng them for 30-35 minutes in the larger sized tins.

Sorry it took me a bit to get back to this Valerie but if I’ve done my math correctly, each bite is about 40 calories and less than a gram of fat each! (About 3/4 of a gram of fat) Not bad for such a yummy treat!

Funny you should ask! I did that math for my own records too 🙂 it’s under a point per bite – the entire recipe totals 21 points, and that’s for about 26 bites so each bite is about 3/4 of a point. So for 4 bites, it’s just a hair over 3 pts. Which is a pretty decent serving!! Hope that helps!

I haven’t tried freezing them Korine but since they’re very similar in Texture to a muffin, I beT they would freeze just fine for those ‘chaotic mornings’ which I have way too often myself!

Just the other day I was looking on pinterest and saw this great idea of apple cinnamon quinoa so I clicked on the link and it brought me to this wonderful blog. I was scoping it out when I saw a picture of the beautiful couple and was like “Hey, they look familiar”!?! I read the about us section and was couldn’t believe that they couple on this great blog was the Dave and Kate that my husband Brian and I know!!!! I read that you are doing the Princess Half Marathon in Disney…congrats! I ran that race twice. It is a lot of fun but I have a few tips for you (if you would like). Jess! What a small world eh? Well firstly, I’m glad you liked the Apple Cinnamon Quinoa Bites – let me know how they come out if you end up making them! As far as the Princess 1/2, I can’t wait! The same group of friends and I did it in 2011 too, but I am always open to new tips and advice! The training has been going pretty good, despite the chilly temps 🙂 I hope you and Brian are doing well and having a great 2013 so far – we’ll most certainly have to talk ‘NZ’ shop soon! Can’t believe it’s almost been a year – yikes!

Excellent question Rebecca! You can store hem in an air tight container for up to a week or you can also freeze them in an air tight container for up to a month. They may last longer than that in the freezer but I personally don’t like to let baked goods stay in te freezer for longer than a month – just a personal preference!

Hi meg! Great question (I should actually address that!) but no the quick oats you can add as they are- no need to cook them. They’re really just to help add some consistency to the bites. And I used a Cortland apple but I’m sure any other type would work too – the only one I can think might not jive well is a Granny Smith, due to its sourness.

I haven’t yet in this recipe Laura, but I have substituted agave for syrup in other recipes and it’s the same great taste, and better for you! Same with artificial sweeteners – I would recommend swapping out the granulated sugar with the Splenda Sugar Blend or Truvia and I know Splenda also has a brown sugar blend that you could probably swap out for the brown sugar in this recipe to save some calories!

They will definitely work Abby! The only thing I discovered after doing a smidgen of research is that the Old Fashioned Oats may just change the texture a bit, making them a bit chewier than the quick oats would (which may even be a good thing!) But they’re definitely interchangeable!

I didn’t have any syrup or brown sugar, so I subbed in molasses and raw sugar. I over baked them, but they are yummy. Not super sweet, but great flavor depth.

Is that allergy related Cathy? If not You can swap out 1/2 cup of flour for the oats – or you could also try just eliminating them completely and usin another cup of quinoa. The texture of the bite may be a little different but I they would still taste good!

For this recipe Sarah, I cooked the Quinoa in water – I thought that the chicken broth might give it to much of a savory flavor for something that’s supposed to be a little on the sweeter side. I have cooked it in chicken broth for other recipes that are more geared towards dinner though and it really adds a lot of flavor! I didn’t let the Quinoa cool completely – I think that when you mix it w/ the other ingredients while it’s still warm, it can aid in the combination of flavors and textures, but I think it would be fine if you had some precooked Quinoa that had cooled completely and you wanted to use it in the recipe.

Hi I’m making these as I type! I’ve been aiming to get more quinoa in my diet and this seems like a super way especially since it will be perfect for something to grab on the go in the morning. I saw the earlier comment about calories and fat content but was wondering if you have any other nutritional info such as the anount of protein? Thanks! Can’t wait to try them!

Wow, that is multi tasking! Well, according to my trusty Weight Watchers calculations (and I’m 99.9% sure I’ve done my math right!) the nutritional facts are as follows for 1 Apple Cinnamon Quinoa Bite:
Calories – 40 (approximately)
Fat – 1 gram (actually a little less than 1 gram but rounded up)
Carbohydrates – 7 grams
Fiber – less than 1 gram (1/2 gram)
I hope that helps and that they turn out well for you!
Protein – 1 gram (actually 1.25 grams but I rounded down)
